Ingredient:
- 2 lb. raw roast beef, cut up
- 2 lg. carrots, sliced
- 3 potatoes, cut up
Onion to taste
- 1/2 pkg. frozen peas
- Salt and pepper to taste
- 1 can cream of mushroom soup
Direction:
Place all ingredients in a crock pot and cook on high for 4 hours, stirring occasionally; or bake uncovered at 275 degrees for 5 hours. |
Ingredient:
- 1 1/2 cups water
- 1/2 cup amaranth
- salt
Direction: Combine water, the amaranth, and a pinch of salt in a small saucepan, bring to a boil, and then reduce the heat to a simmer. Cover and cook over low heat for 25 minutes or until the water is absorbed, about 15 minutes. Makes about 1 cups.
Variation with Mixed Tiny Grains: Mix teff, amaranth, and quinoa, the latter thoroughly rinsed, and cook as described.
